Duck Cassoulet
Ingredients
- 5 tbsps Olive Oil
- 2 1/2 Slices of Pancetta, diced
- 1 Medium Onion, diced
- 1 lb Dried Great Northern Beans, Soaked For 2 Hours
- 4 Thyme Sprigs
- 1 Quart Chicken Stock
- 10 Cloves of Garlic
- 4 Duck Leg Confit
- 3/4 lb Diced Sausage
- 4 ozs Diced Bacon
- 2 cups Coarse Bread Crumbs
- 2 tbsps Chopped Parsley
- 2 Quarts Water
