Dungeness Crab Salad

  • 8 ozs Dungeness Crabmeat
  • 2 tbsps Mayonnaise
  • 1 tbsp Chopped red pepper
  • 1/2 tsp Fresh lemon juice
  • 2 tsps Chopped fresh tarragon leaves
  • 1 Plum tomato, seeded and chopped
  • 1 Avocado
  • 1 cup Chopped Lettuce
  • Chopped chives for garnish
  • Salt and pepper to taste


In a bowl, combine all ingredients except lettuce and chives, taking care not to break up the crab as it is stirred. Mound the lettuce in the two halves of the hollowed out avocado and top with the crab salad. Garnish with the chopped chives and serve chilled.
